Meet Chef Levent
Levent Karahan, executive chef at Pullman Phu Quoc Beach Resort, is as much a global nomad as his diners. Born and raised in Turkey, he quickly rose up the ranks at some of the country’s most exclusive hotels before working at Accor hotels in Dubai. Shortly after he arrived in Phu Quoc, he fell in love with the island’s seafood heritage and emphasis on small producers.
‘When I go to the nearby fish and vegetable markets, everything is local and fresh. Nothing is mass produced on big farms,’ he said. ‘As a chef who loves working with regional ingredients, that really excites me.’
To make the most of local products, Chef Levent relies on a healthy and understated cooking style. ‘I like a very natural taste. For example, I make my own vegetable stocks – no powders or chemicals – and bring out the flavour of dishes with just salt, local peppercorns and fresh herbs.’ In fact, one of his favourite new ingredients is Vietnamese basil.
His greatest satisfaction, besides seeing diners enjoying their meal, is leading his 75-member team. ‘I have a simple philosophy: “One team, one dream.” We each know our jobs, and everyone is focused on creating tasty, hygienic and healthy dishes,’ he said. ‘It’s truly a beautiful thing.’
